Getting ready for the Christmas season: Espresso Cookies à la Coffee-Bike

Wherever you go, you can already see the signs: Thousands of lights are sparkling down from trees and buildings, Christmas markets are opening and mulled wine is sold at every corner. Christmas is coming soon. We here at Coffee-Bike are 100% addicted to caffeine. That’s why we are not willing to deny ourselves the daily supply of coffee during this time of the year. Hence we have created and refined Coffee-Bike espresso cookies especially for you (and well for ourselves). These cookies will help you to get smoothly and fully caffeinated through the cold season.
You will need the following ingredients for approx. 40 cookies:
50g Milk chocolate
50g Dark chocolate
1 Egg yolk
50g Dark chocolate coating
50ml Freshly brewed espresso
50g Icing sugar
That’s how you do it:
- Preparing the dough
First of all you need to melt the milk chocolate and the dark chocolate by means of a water bath. Pour the freshly brewed espresso into the bowl of chocolate and mix both ingredients until a sticky cream is formed.
After this you need to scramble the butter, egg yolk and icing sugar together with 1 table spoon of your „espresso chocolate“ until a creamy mixture is formed. After that the dough needs to be wrapped up in a cling film and has to be stored in the fridge for 15 minutes. The rest of the espresso chocolate can be left at room temperature.
- Ready to bake
The oven should be pre-heated at 160°C. Now you can put a baking paper on the griddle and take the dough out of the fridge. It needs to be rolled out on a flat workspace. The cookies can be cut out now. Put your cookies on the griddle and shove it into the oven for 12 – 15 minutes.
- Double decker
Stir the espresso chocolate one more time and coat two cookies at a time with the liquid cream and „stick“ it together. Leave those double deckers to cool down.
- Decorate and adorn
As soon as the dark chocolate coating has been melted put it in a freezer bag, cut out a small corner in order that you can squeeze the chocolate out through the tiny hole. Now you can start decorating the cookies as you like. After this give it some time to cool off.
Voilà, caffeinated treats for the best time of the year.
